It’s not every day that you hear about a young teenage boy driving his mother up the wall because he wants to cook and make a mess in her kitchen. Spending pocket money on cooking magazines and new ingredients to experiment with in the kitchen might seem unusual to some. Yet for David Griffin, head Chef at il lido waterfront kitchen at Darwin’s Waterfront Precinct, this is how his love and keen interest in food all began.

Dave started his career washing dishes at Crowne Plaza in the Hunter Valley, before progressing through other establishments, including French cuisine at Bistro Molinez, gaining experience and building his repertoire of delicious dishes. A move to the Northern Territory coincided with his final apprenticeship year and the position of head chef at Pee Wees restaurant, Darwin. In taking on a new challenge and an opportunity to allow Dave’s creative mind and ideas to fly, il lido is in store for something truly special. A chef with a genuine passion for food, and with mates both interstate and overseas in the same industry, ideas are shared and evolving.
